Raisins in Gluten Free products Last year, Mintel’s Global New Product Database identified gluten free bakery products as a key topic of interest in the baking industry as the number of consumers with a gluten allergy increase. California Raisins in gluten free biscotti was featured at the recent American Association of Cereal Chemists and World Grain Congress in San Francisco. The manufacturer, Mariposa Company of Berkeley, California has developed a line of the products including raisins and no gluten – and great taste. Attendees at the Cereal Chemist meeting were amazed at the desirable flavor of the item. The raisins held up to the baking process and provided textural desirable flavor in lieu of gluten. |
